I’ll be the first to admit, the sound of broccoli soup in itself, is not at all inviting!

But around two years ago a friend cooked this for a group of us. I thought, well, everything else Miriams ever cooked has been amazing PLUS this soup has bacon in it (which pretty much makes anything better) so gave it a go. I was pleasantly surprised and even went back for seconds, so delish!

Since then I’ve cooked it many times, as it’s so easy to make, a great (+ tasty) way to get a good dose of broccoli benefits into your system

Ingredients

  • 2-4 rashers bacon
  • 1 onion (diced)
  • 2 tsp crushed garlic
  • 2 broccoli
  • 4 cups vegetable or chicken stock
  • ¼ cup toasted pine nuts
  • A sprinkle of parmesan (if the flavour floats your boat)

What to do:

In a deep(ish) saucepan, cook bacon, onion and garlic until brown.

Add the broccoli and stock.

Cook on a low temperature and simmer for 15-20 mins (or until the broccoli is tender)

Purée the mixture using a food processor until it is smooth.

Prepare the cheese toasties (soup without toast? I don’t think so!)

And lightly toast the pine nuts on a frypan

Ladle the soup into bowls and sprinkle over the pine nuts.
